Packed with marinated chicken, crisp veggies, chewy udon noodles, and a savory Pad Thai sauce, it’s a delicious, restaurant-style meal you can make in your own kitchen.

Ingredients:
🥢 1 ½ chicken breasts, diced
🥢 1 tbsp lemon juice
🥢 1 tbsp minced garlic
🥢 ½ tsp garlic powder & onion powder
🥢 1 tbsp olive oil
🥢 ½ yellow onion, diced
🥢 1 cup broccoli florets
🥢 1 cup snap pea stir-fry mix (or veggies of choice)
🥢 2 eggs, scrambled
🥢 1 tsp soy sauce
🥢 3 tbsp Thai Kitchen Pad Thai sauce (divided)
🥢 1 pack Ka-Me Udon Stir-Fry Noodles
Instructions:
- Marinate the Chicken: In a bowl, mix the diced chicken with lemon juice, minced garlic, garlic powder, onion powder, and olive oil. Cover and refrigerate for 1 hour or more.
2. Prepare the Noodles: Cook the Ka-Me Udon Stir-Fry Noodles according to package instructions. Set aside.
3. Scramble the Eggs: Heat ½ tbsp oil in a large pan or wok over medium heat. Scramble the eggs until cooked, then remove and set aside.
4. Sauté the Onions: In the same pan, add a little more oil if needed. Sauté the diced onions for about 2 minutes until softened. Remove and set aside.
5. Cook the Chicken: Add 1 tbsp oil to the pan and cook the marinated chicken over medium-high heat until fully cooked, stirring occasionally (about 4–5 minutes). Once done, add 1 tbsp Pad Thai sauce and stir to coat.
6. Cook the Veggies: Add broccoli and snap pea stir-fry mix (or any veggies of choice). Stir-fry for another 3–4 minutes until veggies are crisp-tender.
7. Combine Everything: Return the onions, scrambled eggs, and noodles to the pan. Pour in the remaining 2 tbsp Pad Thai sauce and soy sauce. Toss well to combine.
8. Serve & Enjoy: Plate the stir-fry and enjoy warm!
