The Recipe:

  • 1 ½ cups grated zucchini (about 1-2 medium zucchini)
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon kosher salt
  • 6 tablespoons melted butter
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¾ cup milk chocolate chips

Instructions:

Preheat & Prep: Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.

Mix Wet Ingredients: In a bowl, whisk together sugar, egg, vanilla, salt, and melted butter until smooth.

Combine Dry Ingredients: In a separate bowl, mix the flour, baking soda, and cinnamon.
